Full English Gnocchi Traybake

INGREDIENTS
- 1 pack La Famiglia Rana Tomato & Mozzarella Filled Pan Fry Gnocchi
- 450 g Chestnut mushrooms
- 400 g Cherry tomatoes
- 150 g Streaky bacon
- 415 g Baked beans
- 4 Eggs
- Fresh parsley
- Olive oil
METHOD
- 1. Preheat and prep the tray bake:
◯ Heat your oven to 200°C fan.
◯ Chop the mushrooms into quarters.
◯ Add them to a large deep roasting tin along with the cherry tomatoes (leave them on the vine if they are), and the bacon rashers.
◯ Drizzle with olive oil, season with salt and pepper, and roast in the oven for 10 minutes. - 2. Pan-fry the gnocchi:
◯ While the tray bakes, heat a drizzle of olive oil (or a knob of butter) in a large frying pan over medium heat.
◯ Add the gnocchi and cook for 2–3 minutes, until lightly golden and crispy. - 3. Assemble the tray bake:
◯ After 10 minutes, remove the tray from the oven.
◯ Carefully lift out the cherry tomatoes and bacon.
◯ Tip in the baked beans, spreading them around the mushrooms.
◯ Top with the crispy gnocchi, cherry tomatoes and bacon.
◯ Use a spoon to make small craters in the tray, then crack in your eggs. - 4. Finish in the oven:
◯ Return the tray to the oven for 3–4 minutes, or until the egg whites are just set and yolks are still runny. - 5. Serve and enjoy:
◯ Sprinkle over chopped parsley.
◯ Divide between plates and tuck in.
