CHICKEN & SMOKED PANCETTA TORTELLONI with onions, cured ham and smoked paprika
INGREDIENTS
1pack Rana Chicken & Smoked Pancetta Tortelloni
2small brown onions peeled and sliced into wedges
55grcured ham, roughly chopped
4tbsp extra virgin olive oil
120mlsmoked whisky
1tsp smoked paprika
salt and pepper to taste
METHOD
Heat the oil in a non sticking frying pan; add onion wedges and toss on medium high heat for 4-5 minutes until softened. Add cured ham and cook 2 more minutes until the cured ham is fragrant and crispy. Sprinkle with whisky, stir and season with salt and pepper to taste.
In the meantime cook the Tortelloni according to package instructions and drain, reserving a ladleful of the pasta cooking water. Add pasta to the pan and stir gently, adding some of the pasta water if you need to loosen the sauce.
Sprinkle with smoked paprika, divide Tortelloni among plates and serve.
