Creamy Woodland Tortelloni
INGREDIENTS
- 1 Pack Of Mushroom & Mascarpone Tortelloni
- 100 g Mushrooms, Halved
- 2 Tbsp Olive Oil
- 1 Garlic Clove, Sliced
- 1 Red Chilli, Finely Chopped
- 150 g Spinach
- Salt & Pepper (To Taste)
METHOD
Cook the mushrooms:
◯ Place 100g of halved mushrooms in a dry non-stick pan.
◯ Fry until golden and lightly crisped.
Add flavour:
◯ Add 2 tbsp olive oil to the pan.
◯ Stir in 1 sliced garlic clove and 1 finely chopped red chilli.
◯ Cook for 1 minute until fragrant.
Add the greens:
◯ Stir in 150g spinach and cook until just wilted.
Cook the pasta:
◯ Bring a pot of salted water to a boil.
◯ Add the Tortelloni and simmer for 2 minutes.
◯ Drain well.
Finish the dish:
◯ Toss the cooked pasta with the garlic mushrooms and spinach.
◯ Season to taste and serve.
