Crispy Gnocchi Caesar Salad

INGREDIENTS
- 1 pack La Famiglia Rana Garlic & Mozzarella Filled Pan Fry Gnocchi
- 1 Garlic clove
- 10 Anchovies in oil
- 75 g Mayonnaise
- 1 tbsp Dijon mustard
- 1 Lemon
- 60 g Parmesan
- 2 Baby gem lettuces
- 30 g Fresh parsley
- 70 g Rocket
- 2 tbsp Capers
- Olive oil
METHOD
- 1. Make the dressing:
◯ Finely grate the garlic into a bowl.
◯ Add half the anchovies and mash with a fork to make a paste.
◯ Stir in the mayonnaise, mustard, lemon juice, and half the grated Parmesan.
◯ Season with salt and pepper.
◯ If the dressing is too thick, loosen it with a splash of cold water.
2. Prep the greens:
◯ Roughly tear the lettuce.
◯ Pick the parsley leaves and discard the stalks.
◯ Toss the lettuce and parsley with the rocket.
3. Cook the gnocchi:
◯ Heat a frying pan with a drizzle of olive oil (or butter if you prefer).
◯ Once hot, add the gnocchi and pan-fry for at least 5 minutes, until crispy and golden.
4. Assemble the salad:
◯ Toss the salad greens in the dressing.
◯ Add the remaining anchovies, capers, and the rest of the grated Parmesan.
◯ Share between plates and top with the crispy gnocchi.
