Italian Sunshine Ravioli

INGREDIENTS

  • 1 Pack Of Basil Pesto & Pine Nut Ravioli
  • 8 Sun-dried Tomatoes In Oil, Drained And Finely Sliced
  • 20 g Pine Nuts
  • A Small Handful Of Fresh Basil Leaves, Torn
  • 1 Tbsp Olive Oil (Use The Oil From The Sun-dried Tomatoes, If Available)
  • Salt & Pepper (To Taste)
  • Optional: A Little Grated Parmesan To Finish

METHOD


Toast the pine nuts:
◯ In a dry frying pan, toast 20g of pine nuts over medium heat for 2–3 minutes until golden. Set aside.

Warm the tomatoes:
◯ In the same pan, add 1 tbsp olive oil and gently warm the sliced sun-dried tomatoes for 1–2 minutes. Remove from heat.

Cook the pasta:
◯ Bring a pot of salted water to a boil.
◯ Add the Ravioli and simmer for 2 minutes.
◯ Drain, reserving a small splash of pasta water.

Finish the dish:
◯ Toss the cooked ravioli with the warmed sun-dried tomatoes and a spoonful of pasta water to loosen if needed.
◯ Add torn fresh basil and toasted pine nuts.
◯ Season with salt and pepper to taste, and grate over a little Parmesan if desired.
