Riviera Ravioli
INGREDIENTS
- 1 Pack Of Tomato, Mozzarella & Basil Ravioli
- 160 g Canned Tuna In Oil, Drained
- 30 g Rocket (Arugula)
- A Few Cherry Tomatoes
- A Small Bunch Of Parsley
- 1 Organic Lemon
- 3 Tbsp Extra Virgin Olive Oil
- Salt
METHOD
Make the dressing:
◯ Peel a strip of lemon zest, slice into thin strips.
◯ Combine with olive oil and chopped parsley.
Cook the pasta:
◯ Boil ravioli in lightly salted water per instructions. Drain.
Assemble the dish:
◯ Toss ravioli with tuna, rocket, and lemon herb oil.
◯ Add cherry tomato wedges and serve.
