Sunset In Verona Ravioli
INGREDIENTS
- 1 Pack Of Roast Chicken Ravioli
- 0.5 Onion, Finely Chopped
- 0.5 Red Bell Pepper, Sliced
- 0.5 Green Bell Pepper, Sliced
- 60 g Taggiasche Olives, Drained
- A Small Bunch Of Parsley, Chopped
- 1 Tsp Brown Sugar
- 0.5 Tbsp Vinegar
- Extra Virgin Olive Oil
- Salt
- Pepper
METHOD
Cook the vegetables:
◯ Sauté onion in olive oil. Add peppers, salt, and cook on high for 10 mins until slightly charred.
◯ Add brown sugar, caramelise, then deglaze with vinegar.
◯ Add olives and chopped parsley.
Cook the pasta:
◯ Boil ravioli in lightly salted water per instructions. Drain.
Finish the dish:
◯ Toss ravioli with vegetables and a splash of cooking water.
◯ Season with pepper and garnish with parsley.
